Mezcal
Mezcal, lub mescal, to napój alkoholowy destylowany z rośliny maguey pochodzącej z Meksyku. Słowo mezcal pochodzi od Nahuatl mexcalli metl i ixcalli, co oznacza "pieczoną agawę". Maguey rośnie w wielu częściach Meksyku, choć większość mezcalu jest w Oaxaca. Jest powiedzenie, które przypisuje się Oaxaca w odniesieniu do napoju: "para todo mal, mezcal, y para todo bien también". Nie jest jasne, czy w Meksyku wyprodukowano destylowane napoje przed hiszpańskim podbojem. Hiszpanie wprowadzono do sfermentowanych napojów, takich jak pulque, również z maguey. Wkrótce konkwistadory zaczęły eksperymentować z maguey rośliną, aby znaleźć sposób do produkcji dmoczonego fermentowanego mash. Wynik był mezcal.
