Ácido ascórbico
O ácido ascórbico é um composto orgânico natural com propriedades antioxidantes. É um sólido branco, mas as amostras impuras podem parecer amareladas. Ele se dissolve bem em água para dar soluções ligeiramente ácidas. O ácido ascórbico é uma forma de vitamina C. Foi originalmente chamado ácido L-hexurônico, mas, quando se descobriu que tinha atividade de vitamina C em animais, a sugestão foi feita para renomear o ácido L-hexurônico. O novo nome para o ácido L-hexurônico é derivado de a- e scorbutus, a doença causada por uma deficiência de vitamina C. Como é derivado da glicose, muitos animais são capazes de produzi-lo, mas os humanos o exigem como parte de sua nutrição . Outros vertebrados que não possuem a capacidade de produzir ácido ascórbico incluem outros primatas, cobaias, peixes teleosséticos, morcegos e algumas aves, o que exige que seja como micronutriente dietético. Existe um ácido D-ascórbico, que não ocorre na natureza. Pode ser sintetizado artificialmente. Possui propriedades antioxidantes idênticas ao ácido L-ascórbico, mas tem muito menos atividade de vitamina C. Este fato é tomado como evidência de que as propriedades antioxidantes do ácido ascórbico são apenas uma pequena parte da sua efetiva atividade vitamínica.
