Ácido gordo
Na química, e especialmente na bioquímica, um ácido gordo é um ácido carboxílico com uma longa cauda alifática, que é saturada ou não saturada. A maioria dos ácidos gordurosos que ocorrem naturalmente tem uma cadeia de um número par de átomos de carbono, de 4 a 28. Os ácidos gordurosos geralmente são derivados de triglicerídeos ou fosfolípidos. Quando não estão ligados a outras moléculas, são conhecidos como ácidos graxos "livres". Os ácidos gordurosos são fontes importantes de combustível porque, quando metabolizados, produzem grandes quantidades de ATP. Muitos tipos de células podem usar glicose ou ácidos graxos para este fim. Em particular, o coração e o músculo esquelético preferem ácidos graxos. Apesar das afirmações de longa data em contrário, o cérebro pode usar ácidos graxos como fonte de combustível além de corpos de glicose e cetona.
