Racii, cunoscuți și sub denumirea de languste, coji de zahăr, homari de apă dulce sau mlaștinii, sunt crustacee de apă dulce asemănătoare cu homari mici, cărora le sunt legate; taxonomic, ele sunt membre ale superfamiliilor Astacoidea și Parastacoidea. Respiră prin găuri de pene și se găsesc în corpuri de apă care nu îngheață până la fund. Ele se găsesc în cea mai mare parte în pârâuri și cursuri unde există apă proaspătă și care au adăpost împotriva prădătorilor. Majoritatea racilor nu pot tolera apa poluată, deși unele specii cum ar fi Procambarus clarkii invazive sunt mai dificile. Racul se hrănește cu animale și plante vii și moarte.
