Oțelul carbon este oțelul în care elementul principal de aliere interstițială este carbonul în intervalul de 0,12-2,0%. Institutul American de Fier și Oțel definește oțelul carbon ca fiind următorul: "Oțelul este considerat oțel carbon atunci când nu este specificat sau necesar un conținut minim pentru crom, cobalt, molibden, nichel, niobiu, titan, wolfram, vanadiu sau zirconiu sau orice alt element care trebuie adăugat pentru a obține un efect de aliere dorit, atunci când minimul specificat pentru cupru nu depășește 0,40% sau când conținutul maxim specificat pentru oricare dintre următoarele elemente nu depășește procentele notate: manganul 1,65, siliciul 0,60, cuprul 0.60.“ Termenul "oțel carbon" poate fi de asemenea utilizat cu referire la oțelul care nu este oțel inoxidabil; în această utilizare, oțelul carbon poate include oțeluri aliate. Pe măsură ce procentajul de carbon se ridică, oțelul are capacitatea de a deveni mai greu și mai puternic prin tratarea termică; totuși devine mai puțin ductil. Indiferent de tratamentul termic, un conținut mai mare de carbon reduce sudabilitatea. În oțelurile de carbon, conținutul ridicat de carbon scade punctul de topire.
