Oțetul este un lichid constând în principal din acid acetic și apă. Acidul acetic este produs prin fermentarea etanolului prin bacterii de acid acetic. Oțetul este folosit în principal ca ingrediente de gătit, dar din punct de vedere istoric, ca acid cel mai ușor disponibil, a avut o mare varietate de utilizări industriale, medicale și domestice, dintre care unele sunt încă promovate astăzi. Oțetul comercial este produs fie prin procese de fermentare rapide sau lente. În general, se utilizează metode lente cu oțeturile tradiționale, iar fermentația are o durată lentă pe parcursul a mai multor luni sau un an. Perioada de fermentare mai lungă permite acumularea unui șuvoi netoxic compus din bacterii de acid acetic. Metodele rapide adaugă mamei de oțet lichidului sursă înainte de adăugarea aerului cu ajutorul unui sistem de pompare cu tuburi de difuzie sau a unei turbine pentru a promova oxigenarea pentru a obține cea mai rapidă fermentație. Vinegar is a liquid consisting mainly of acetic acid and water. The acetic acid is produced by the fermentation of ethanol by acetic acid bacteria. Vinegar is now mainly used as a cooking ingredient, but historically, as the most easily available mild acid, it had a great variety of industrial, medical, and domestic uses, some of which are still promoted today. Commercial vinegar is produced either by fast or slow fermentation processes. In general, slow methods are used with traditional vinegars, and fermentation proceeds slowly over the course of months or a year. The longer fermentation period allows for the accumulation of a nontoxic slime composed of acetic acid bacteria. Fast methods add mother of vinegar to the source liquid before adding air using a venturi pump system or a turbine to promote oxygenation to obtain the fastest fermentation. In fast production processes, vinegar may be produced in a period ranging from 20 hours to three days. With those fast processes, commercial vinegar contains residual alcohol.
