Mezcal
Mezcal ya da mescal, Meksika'ya özgü maguey bitkisinden elde edilen damıtılmış alkollü bir içecektir. Mezcal sözcüğü Nahuatl mexcalli metl ve ixcalli'den geliyor, bu da "fırında pişirilmiş agave" anlamına geliyor. Çoğunluk mezcal Oaxaca'da yapıldığı halde maguey Meksika'nın pek çok yerinde yetişir. Oaxaca'ya içki ile ilgili olarak atfedilen bir söz vardır: "para cezası, mezcal, y para todo bien también". İspanyol Fetihi'nden önce Meksika'da damıtılmış içeceklerin üretilip üretilmediği belli değil. İspanyollar, aynı zamanda maguey bitkisinden üretilen pulque gibi yerli fermente içeceklere de sunuldu.
