Tat, tatlı algılama ya da güstasyon, dildeki yiyecek ya da diğer maddelerin duyusal izlenimidir ve beş geleneksel duyudan biridir. Tat, ağızda bulunan bir maddenin, tat tomurcuklarında bulunan tat alma hücreleri ile kimyasal olarak reaksiyon gösterdiği zaman üretilen sansasyondur. Tadı, koku ve trigeminal sinir uyarımı ile birlikte, yiyeceklerin veya diğer maddelerin aromalarını belirler. İnsanlar tat tomurcuklarında ve dilin üst yüzeyi ve epiglot gibi diğer alanlarda tat alma düzenine sahiptirler. Dil, çıplak gözle kolayca görülebilen, papillae denilen binlerce küçük darbe ile kaplıdır. Her papilla içerisinde yüzlerce tat tomurcuğu vardır. Bunun istisnası damak tomurcukları içermeyen filiform papilladır. Dilin arka ve ön tarafında bulunan 2000 ila 5000 damak tadımı var. Diğerleri çatı, yan ve arkada ağız ve boğazda bulunur. Her tat tomurcuğu, 50 ila 100 tat alma hücresi içerir. Tat hissi beş temel tada ayrılabilir: tatlılık, ekşilik, tuzluluk, acılık ve umami.
