Пектин
Пектин - це структурний гетерополісахарид, що міститься в первинних клітинних стінках наземних рослин. Вперше він був виділений та описаний в 1825 році Анрі Браконно. Він виробляється комерційно як біло-блакитний коричневий порошок, переважно витягнутий з цитрусових фруктів, і використовується в їжі як гелеутворюючий агент, особливо у варенням і желе. Він також використовується у наповнення, ліки, цукерки, як стабілізатор фруктових соків та молочних напоїв, а також як джерело харчових волокон.
