Lecithin
Lecithin ist ein allgemeiner Begriff, um jede Gruppe von gelb-bräunlichen fetthaltigen Substanzen zu bezeichnen, die in tierischen und pflanzlichen Geweben aus Phosphorsäure, Cholin, Fettsäuren, Glycerin, Glykolipiden, Triglyceriden und Phospholipiden auftreten. Lecithin wurde erstmals 1846 vom französischen Chemiker und Apotheker Theodore Gobley isoliert. Im Jahre 1850 nannte er das Phosphatidylcholin-Léchithin. Gobley ursprünglich isolierte Lecithin aus Eigelb-λέκιθος Lekithos ist "Eigelb" im Altgriechischen und etablierte die komplette chemische Formel von Phosphatidylcholin im Jahre 1874; Dazwischen hatte er die Anwesenheit von Lecithin in einer Vielzahl von biologischen Dingen, darunter venöses Blut, Galle, menschliches Gehirngewebe, Fisch-Eier, Fischrogen und Hühner- und Schafhirn. Lecithin kann leicht chemisch oder mechanisch extrahiert werden. Es ist in der Regel aus Quellen wie Sojabohnen, Eier, Milch, marine Quellen, Raps, Baumwollsamen und Sonnenblumen. Es hat eine geringe Löslichkeit in Wasser, ist aber ein ausgezeichneter Emulgator. In wässriger Lösung können seine Phospholipide je nach Hydratation und Temperatur entweder Liposomen, Doppelschichten, Micellen oder lamellare Strukturen bilden.
