Masa
Masa ist spanisch für Teig. In Amerika ist es oft kurz für masa de maíz, ein Maisteig aus frisch zubereiteter Hölle. Es wird für die Herstellung von Mais-Tortillas, Tamales, Pupusas, Arepas und viele andere lateinamerikanische Gerichte verwendet. Die getrocknete und pulverförmige Form heißt masa harina, masa de harina, und manchmal maseca, der Name einer führenden Handelsmarke. Es wird vor Gebrauch mit Wasser rekonstituiert. Masa de trigo ist spanisch für Weizenmehl. Es wird auch für die Herstellung von Weizen-Tortillas und andere Brote und Gebäck verwendet. Zur Herstellung von Hominy wird das Feld Maiskorn getrocknet und dann durch Einweichen und Kochen des reifen Getreides in einer verdünnten Lösung von gelöschtem Kalk oder Holzasche behandelt, ein Verfahren, der als Nixtamalisierung bezeichnet wird. Kalk und Asche sind stark alkalisch: Die Alkalinität hilft der Auflösung von Hemicellulose, der großen klebstoffartigen Komponente der Maiszellwände, und löst die Rümpfe von den Körnern und erweicht den Mais. Ein Teil des Maisöls wird in Emulgatoren zerlegt, während die Verklebung der Maisproteine zueinander erleichtert wird.
