WHAT DOES DEXTRIN MEAN IN GERMAN?

dextrins

Dextrins, also called starch gums or maltodextrins, are starch degradation products which lie between their oligosaccharides and starch. They are usually in the form of white or light yellow powder. They are obtained mainly from wheat, potato and corn starch by dry heating or acid. In nature, dextrin is produced, for example, by Bacterium macerans. Dextrins are also formed by the enzymatic degradation of starch by amylase. In the human body as well as glucose and maltose, short-chain oligosaccharides develop during the digestion from amylopectin and amylose, which are frequently confounded with the dextrins. In the enzymatic cleavage of starch, the polymers are cleaved into mono-, di- and oligosaccharides. The products thus formed are referred to as maltodextrin or glucose syrup, depending on their degradation wheel. Amylopectin and amylose are cleaved from the α-amylase into oligosaccharides, which can be cleaved again by β-amylase in maltose and finally by α-glucosidase in α-D-glucose.
