Beri-beri - the disease, an extreme form of avitaminosis due to vitamin B1 deficiency. Vitamin B1 plays an important role in the metabolism of carbohydrates - enables proper glucose burning. Vitamin B1 deficiency due to incomplete oxidation of glucose accumulates in the body toxic pyruvic acid, which causes damage to the most sensitive tissues of the body: nerves and endothelium of the capillaries, paralysis of the abdominal muscles. As a result, multiple inflammation, muscle wasting, and muscle wasting occur. Beri-beri – choroba, będąca skrajną formą awitaminozy na skutek niedoboru witaminy B1. Witamina B1 odgrywa istotną rolę w przemianie węglowodanów – umożliwia prawidłowe spalanie glukozy. Przy niedoborze witaminy B1 wskutek niecałkowitego utleniania glukozy gromadzi się w ustroju toksyczny kwas pirogronowy, który powoduje uszkodzenie najwrażliwszych tkanek ustroju: nerwów i śródbłonków włośniczek, porażenia mięśni okoruchowych. W rezultacie dochodzi do zapalenia wielonerwowego, porażeń, zaników mięśni. Ponadto występują obrzęki kończyn, twarzy i tułowia, brak łaknienia i wybarwienia skóry oraz liczne zaburzenia psychiczne. Dawniej choroba beri-beri występowała u ludzi odżywiających się wyłącznie białym, łuskanym ryżem. Obecnie występuje wyjątkowo rzadko. Leczenie witaminą B1 i dietą wysokowitaminową. Podczas badań nad chorobą beri-beri Kazimierz Funk wykrył i wyodrębnił w 1911 w otrębach ryżowych substancję, której brak wywołuje tę chorobę. Odkrytą substancję nazwał witaminą, tworząc podstawy nauki o witaminach.
