Kutia

Kutia - traditional Ukrainian, Belarusian, Russian, Lithuanian and formerly Polish cuisine. Currently it is being prepared in Bialystok, Lubelszczyzna, and also by Kresowian and their descendants in various parts of Poland. The name comes from the Ukrainian word kókkos - pestka, grain, although the folk etymology indicates the word kut - angle. It is one of 12 dishes traditionally included in the East Slavic Christmas Eve. It is mainly eaten during Christmas and New Year. It is custom made of beaten wheat, poppy seeds, malt, honey, nuts: nuts, raisins and other additives. Many recipes include milk or cream for pouring. Nowadays, ingredients that were once not popular and available, such as candied orange peel and almonds, are also used today. In Belarus, more often than with wheat kutia is cooked from barley groats, but sometimes also from rice. There is a widespread distribution of grains from the grains themselves or with the addition of poppies, but without honey and nuts. Kutia – tradycyjna potrawa kuchni ukraińskiej, białoruskiej, rosyjskiej, litewskiej i dawniej polskiej kuchni kresowej. Obecnie jest przyrządzana na Białostocczyźnie, Lubelszczyźnie, a także przez Kresowian i ich potomków w różnych częściach Polski. Nazwa pochodzi od słowa ukraińskiego kókkos – pestka, ziarno, chociaż ludowa etymologia wskazuje na słowo kut – kąt. Jest jedną z 12 potraw tradycyjnie wchodzących w skład wschodniosłowiańskiej wieczerzy wigilijnej. Jada się ją głównie w okresie świąt Bożego Narodzenia i Nowego Roku. Zwyczajowo robiona jest z obtłuczonej pszenicy, ziaren maku, słodu, miodu, bakalii: różnorakich orzechów, rodzynków i innych dodatków. W wielu przepisach uwzględnia się mleko lub śmietankę do polania. Współcześnie używa się też składników, które niegdyś nie były tak popularne i dostępne, takich jak kawałki kandyzowanej skórki pomarańczowej czy migdały. Na Białorusi częściej niż z pszenicy kutię gotuje się z kaszy jęczmiennej, ale czasami także z ryżu. Szeroko rozpowszechniona jest kutia na słono z samych ziaren bądź z dodatkiem maku, ale bez miodu i bakalii.
