Cream

Nata

The cream or cream of milk is the fat of the milk, much used in cooking and sweets and also as main ingredient of the butter. In fresh milk at rest, the fat portion, lighter than water, forms a layer of cream on the surface, which can be removed for later use; this cream has only 30% of milk fat. In industrialized countries, however, the cream is extracted from the milk by centrifugation and then thermally treated to conserve more time. The forms of heat treatment include pasteurization, sterilization and UHT. The cream can be used by beating it with very fine sugar, to form the whipping cream. Another usual way is to add cream to a meat-cooking sauce, as in Marrare's steak or, along with mushrooms, in the stroganoff. The cream can also be fermented to form the crème fraîche and the sour cream or sour cream or sour cream, used in some foods of the United States and also in the borsch and in the cuisine of Russia, Ukraine and other countries of Eastern Europe. A nata ou creme de leite é a gordura do leite, muito utilizada em culinária e doçaria e também como principal ingrediente da manteiga. No leite fresco em repouso, a porção gorda, mais leve que a água, forma uma camada de nata à superfície, que pode ser removida para uso posterior; esta nata tem apenas 30% da gordura do leite.
