Azafrán
El azafrán es una especia derivada de la flor de Crocus sativus, comúnmente conocido como el azafrán de azafrán. El azafrán es un género de la familia Iridaceae. El azafrán del azafrán crece a 20-30 cm y lleva hasta cuatro flores, cada uno con tres estigmas carmesí vivos, que son el extremo distal de un carpelo. Junto con los estilos, o tallos que conectan los estigmas a su planta huésped, los estigmas secos se utilizan principalmente en diversas cocinas como condimento y agente de coloración. El azafrán, una de las especias más caras del mundo en peso, es originario de Grecia o del sudoeste de Asia y se cultivó por primera vez en Grecia. Como un clon genéticamente monomórfico, se propagó lentamente a lo largo de gran parte de Eurasia y más tarde fue traído a partes de Norte de África, Norteamérica y Oceanía. El azafrán, desconocido en el medio silvestre, desciende probablemente de Crocus cartwrightianus, que se originó en Creta; C. thomasii y C. pallasii son otros posibles precursores.
