Enzymes / ɛnzaɪmz / sont de grandes molécules biologiques responsables des milliers de processus métaboliques qui subissent la vie. Ils sont des catalyseurs hautement sélectifs, ce qui accélère grandement le taux et la spécificité des réactions métaboliques, de la digestion des aliments à la synthèse de l'ADN. La plupart des enzymes sont des protéines, bien que certaines molécules d'ARN catalytiques aient été identifiées. Les enzymes adoptent une structure tridimensionnelle spécifique et peuvent utiliser des cofacteurs organiques et inorganiques pour faciliter la catalyse. Dans les réactions enzymatiques, les molécules au début du processus, appelées substrats, sont converties en différentes molécules appelées produits. Presque toutes les réactions chimiques dans une cellule biologique nécessitent des enzymes pour se produire à des taux suffisants pour la vie. Puisque les enzymes sont sélectives pour leurs substrats et n'accélèrent que quelques réactions parmi plusieurs possibilités, l'ensemble des enzymes fabriqués dans une cellule détermine quelles voies métaboliques se produisent dans cette cellule. Comme tous les catalyseurs, les enzymes fonctionnent en abaissant l'énergie d'activation pour une réaction, ce qui augmente considérablement le taux de réaction.
