Estragon
L'estragon est une espèce d'herbe vivace dans la famille des Asteraceae. Une sous-espèce, Artemisia dracunculus var. Sativa, est cultivé pour l'utilisation des feuilles comme une herbe culinaire aromatique. Dans une autre sous-espèce, l'arôme caractéristique est largement absent. L'espèce est polymorphe. Les noms informels pour distinguer les variations comprennent «l'estragon français», «l'estragon russe» et «l'estragon sauvage». L'estragon se trouve nativement dans plusieurs régions de l'hémisphère nord. Il atteint 120-150 cm de hauteur, avec des tiges fines ramifiées. Les feuilles sont lancéolées, de 2 à 8 cm de long et de 2 à 10 mm de large, de vert brillant, avec une marge entière. Les fleurs sont produites en minuscules de 2 à 4 mm de diamètre, chaque capitule contenant jusqu'à 40 fleurs jaunes ou jaunes jaunes. L'estragon français, cependant, produit rarement des fleurs. Certaines plantes à tarragon produisent des graines qui ne sont généralement que stériles. D'autres produisent des graines viables. L'estragon a des racines rhizomateuses et il se reproduit facilement à partir des rhizomes. On croit que le nom "estragon" a été emprunté au nom perse de l'estragon qui est طرخون tarkhūn.
