Le radici sono radici delle piante utilizzate come verdure. Qui "radice" indica qualsiasi parte sotterranea di una pianta. Le verdure di radice sono generalmente organi di stoccaggio, ingranditi per memorizzare energia sotto forma di carboidrati. La botanica distingue radici vere, come radici tuberose e taproots da non-radici, quali tuberi, rizomi, cormi e bulbi, anche se alcuni contengono sia il tessuto taproot che l'ipocotile, rendendo difficile distinguere alcuni tipi.
