Lo spinaci è un impianto vegetale commestibile nella famiglia di Amaranthaceae. È nativo nell'Asia centrale e sud-occidentale. È una pianta annuale che cresce ad un'altezza di 30 cm. Lo spinaci può sopravvivere durante l'inverno in regioni temperate. Le foglie sono alternate, semplici, ovate a base triangolare, molto variabili in dimensioni da circa 2-30 cm di lunghezza e 1-15 cm di larghezza, con foglie maggiori alla base della pianta e foglie piccole più alti sul gambo fiorito. I fiori sono inconsapevoli, giallo-verde, diametro 3-4 mm, maturando in un grappolo di frutta piccolo, duro, asciutto e frastagliato da 5 a 10 mm che contiene molti semi. Spinace comune, Spinacia oleracea, era da lungo tempo considerato nella famiglia Chenopodiaceae, ma nel 2003 la famiglia Chenopodiaceae è stata combinata con la famiglia Amaranthaceae con il nome di cognome "Amaranthaceae" nell'ordine Caryophyllales. All'interno della famiglia Amaranthaceae, Amaranthoideae e Chenopodioideae sono ora sottofamiglie, rispettivamente per gli amaranths ei chenopodi.
