La tiamina o il tiamina o la vitamina B1, denominata "la tio-vitamina", è una vitamina solubile in acqua del complesso B. Primo nome aneurin per gli effetti neurologici dannosi se non presente nella dieta, alla fine è stato assegnato il nome descrittore generico vitamina B1. I suoi derivati del fosfato sono coinvolti in molti processi cellulari. La forma più caratterizzata è il pirofosfato di tiamina, un coenzima nel catabolismo degli zuccheri e degli amminoacidi. Thiamine è utilizzato nella biosintesi del neurotrasmettitore acetilcolina e acido gamma-aminobutirrico. Nel lievito, la TPP è richiesta anche nella prima fase della fermentazione alcolica. Tutti gli organismi viventi usano la tiamina, ma sono sintetizzati solo nei batteri, nei funghi e nelle piante. Gli animali devono ottenerlo dalla loro dieta e, per loro, è un nutrimento essenziale. L'assunzione insufficiente negli uccelli produce una caratteristica polyneuritis. Nei mammiferi, la carenza è la sindrome di Korsakoff, la neuropatia ottica e una malattia chiamata beriberi che colpisce il sistema nervoso periferico e / o il sistema cardiovascolare. La carenza di tiamina ha un esito potenzialmente fatale se rimane non trattata.
