L'acqua in entrata era contenuta in vasche di immagazzinaggio di grandi dimensioni e quando la marea usciva, ruotava le ruote che utilizzavano la potenza meccanica prodotta per la macinazione del grano. I primi avvenimenti risalgono al Medioevo o addirittura a partire dai tempi romani.
