O β-caroteno é um pigmento vermelho-alaranjado fortemente colorido, abundante em plantas e frutas. É um composto orgânico e é quimicamente classificado como um hidrocarboneto e especificamente como um terpenoide, refletindo a sua derivação a partir de unidades de isopreno. O β-caroteno é biosintetizado a partir de pirofosfato de geranilgeranilo. É um membro dos carotenos, que são tetraterpenos, sintetizados bioquimicamente a partir de oito unidades de isopreno e, portanto, com 40 carbonos. Entre esta classe geral de carotenos, o β-caroteno é distinguido por ter anéis beta nas duas extremidades da molécula.
