Fermentação
A fermentação é um processo metabólico que converte açúcar em ácidos, gases e / ou álcool. Ocorre em leveduras e bactérias, mas também em células musculares com fome de oxigênio, como no caso da fermentação do ácido lático. A fermentação também é usada de forma mais ampla para se referir ao crescimento em massa de microorganismos em um meio de crescimento. O microbiologista francês Louis Pasteur é muitas vezes lembrado por suas idéias sobre a fermentação e suas causas microbianas. A ciência da fermentação é conhecida como zimologia. A fermentação ocorre na ausência de oxigênio e torna-se o principal meio celular da produção de ATP. Ele transforma NADH e piruvato produzidos no passo de glicólise em NAD + e várias moléculas pequenas. Na presença de O2, NADH e piruvato são utilizados na respiração; esta é a fosforilação oxidativa, gera muito mais ATP além da criada pela glicólise e, por isso, as células geralmente se beneficiam de evitar a fermentação quando o oxigênio está disponível. As exceções incluem anaeróbios obrigatórios, que não podem tolerar o oxigênio.
