Ácido linoleico
O ácido linoléico é um ácido graxo ômega-6 poliinsaturado. É um líquido incolor à temperatura ambiente. Na literatura fisiológica, tem um número lipídico de 18: 2 cis, cis-9,12. Quimicamente, o ácido linoleico é um ácido carboxílico com uma cadeia de 18 carbonos e duas ligações duplas cis; com a primeira ligação dupla localizada no sexto carbono da extremidade de metilo. O ácido linoléico pertence a uma das duas famílias de ácidos graxos essenciais, o que significa que o corpo humano não pode sintetizá-lo de outros componentes alimentares. A palavra "linoleico" vem da palavra grega linon. Oleic significa "de, ou derivado de azeite de azeitona" ou "de ou relacionado com ácido oleico" porque a saturação da ligação dupla omega-6 produz ácido oleico. Algumas pesquisas médicas sugerem que níveis excessivos de certos ácidos graxos ômega-6 em relação a certos ácidos graxos ômega-3, provavelmente em associação com toxinas exógenas, podem ter efeitos negativos para a saúde.
