Trypsin
A tripsina é uma enzima digestiva segregada pelo organismo e é a protease mais importante com a pepsina. Esta enzima foi descoberta por uma pessoa chamada Quine em 1874. Possui um mecanismo de clivagem que hidrolisa resíduos de arginina e lisina na sequência de aminoácidos do péptido. No caso de interesse, é secretada sob a forma de tripsinogénio. Após a secreção, é ativada pela tripsina para hidrolisar a proteína ou o péptido. A soja possui uma proteína específica que interfere na atividade da tripsina, por isso não digere bem se você come feijão. No entanto, quando a soja é aquecida, este componente de proteína é desnaturado. Como resultado, a tripsina é ativada, o que facilita a entrada de enzimas digestivas.
