Agar sau agar-agar este o substanță gelatinoasă, obținută din alge și descoperită la sfârșitul anilor 1650 sau începutul anilor 1660 de către Minoya Tarozaemon în Japonia, unde se numește Kanten. Agarul este derivat din agaroza polizaharidică, care formează structura de susținere în pereții celulari ai anumitor specii de alge și care este eliberată la fierbere. Aceste alge sunt cunoscute sub denumirea de agarofite și aparțin tulpinii Rhodophyta. Agar este, de fapt, amestecul rezultat din două componente: agaroza polizaharidică liniară și un amestec eterogen de molecule mai mici numite agaropetin. De-a lungul istoriei în timpurile moderne, agarul a fost utilizat în principal ca ingredient în deserturile din Asia și, de asemenea, ca un substrat solid pentru a conține medii de cultură pentru activitatea microbiologică. Agar poate fi utilizat ca un laxativ, un supresor al apetitului, un înlocuitor de gelatină vegetarian, un îngroșător pentru supe, în conserve de fructe, înghețată și alte deserturi, ca agent de clarificare în fabricarea berii și pentru dimensionarea hârtiei și țesăturilor.
