Eiklar

The egg white or egg white is a mixture of thin liquid and gelatinous components around the yolk of the eggs of the reptiles, egg-laying mammals and birds. It is used for protection and contains important substances such as water, certain proteins, ions and water-soluble vitamins for the growing embryo. According to Duden, "Eiklar" is the Austrian term for "protein", while according to other sources, "egg white" is the common name for the egg white. The word "protein" means any protein in the biochemical sense. In the eggshell of chicken eggs is less protein than in the egg yolk, the "egg yolk", which consists of 16% protein. Das Eiklar oder Eiweiß ist eine Mischung aus dünnflüssigen und gallertartigen Bestandteilen um den Dotter der Eier der Reptilien, eierlegenden Säugetiere und Vögel. Es dient dem Schutz und enthält für den wachsenden Embryo wichtige Stoffe wie Wasser, bestimmte Proteine, Ionen und wasserlösliche Vitamine. Laut Duden ist „Eiklar“ die österreichische Bezeichnung für „Eiweiß“, während laut anderen Quellen „Eiweiß“ die gemeinsprachliche Bezeichnung für das Eiklar ist. Das Wort „Eiweiß“ bezeichnet gleichzeitig jedes Protein im biochemischen Sinn. Im Eiklar von Hühnereiern ist weniger Protein als im Eidotter, dem „Eigelb“, der zu 16 % aus Protein besteht.
