The red cabbage, rare blue cabbage, is a cabbage of the cabbage, which is also called red cabbage or blue kraut as a vegetable preparation or in Switzerland Rotkabis or Blaukabis in Switzerland. In sauren Böden erscheint er eher rot, in alkalischen Böden dagegen bläulich. Je mehr Essig oder andere Säuren beim Kochen dazugegeben werden, ein desto deutlicheres Rot hat das Gericht. Durch diese lokalen Zubereitungsformen erklären sich die unterschiedlichen Bezeichnungen Rotkraut oder Blaukraut. Die Farbänderung rührt von den im Rotkohl enthaltenen Anthocyanen her, die als Säure-Base-Indikator wirken. Diese Anthocyane sind auch in anderen lilafarbenen Pflanzen und Blütenblättern wie Lilie oder Petunie enthalten. Der Rotkohl braucht gut gedüngten Boden und ausreichend Feuchtigkeit. Er ist ein typisches Wintergemüse, wird im Frühjahr ausgesät oder gepflanzt und im späten Herbst geerntet. Frühe Sorten machen nur einen Anteil von 10 % aus.
