Miso

Miso is a Japanese paste consisting mainly of soybeans with varying proportions of rice, barley or other cereals. A mixture of steamed soybeans, depending on the variety, is fermented in stems together with stewed rice or steamed barley. The kōji mold is used for the fermentation. This manufacturing process probably originates originally from the imperial China. Nowadays, the preparation is carried out in solid-state bioreactors. Miso is an essential part of Japanese cuisine and serves as an ingredient in many traditional dishes such as miso soup.
