Miscibility is a term used in chemistry that refers to the property of some liquids to be mixed in any proportion, forming a solution. In principle, the term is also applied to other phases, but is used more often to refer to the solubility of one liquid in another. Water and ethanol, for example, are miscible in any proportion. On the contrary, substances are said to be immiscible if in no proportion they are capable of forming a homogeneous phase. For example, ethyl ether is to a certain extent soluble in water, but these two solvents are not considered to be miscible since they are not soluble in all proportions. In organic compounds, the weight percent of the hydrocarbon chain often determines the miscibility of the compound with water. For example, among alcohols, ethanol has two carbon atoms and is miscible with water, whereas 1-octanol is not. This is also the case with lipids; The long chains that characterize the lipids are the reason that these are almost always immiscible with water. Something similar happens with other functional groups.

Por el contrario, se dice que las sustancias son inmiscibles si en ninguna proporción son capaces de formar una fase homogénea. Por ejemplo, el éter etílico es en cierta medida soluble en agua, pero a estos dos solventes no se les considera miscibles dado que no son solubles en todas las proporciones. En los compuestos orgánicos, el porcentaje del peso de la cadena de hidrocarburos con frecuencia determina la miscibilidad del compuesto con agua. Por ejemplo, entre los alcoholes, el etanol tiene dos átomos de carbono y es miscible con agua, mientras que el 1-octanol no lo es.
