Ventresca is the most precious part of red tuna, which is normally consumed fresh or packed in olive oil. The tonsillate of the tuna is obtained from the fattest part of the animal, the one that envelops the abdominal cavity: the muscle bundles are woven into fat and make the meat softer and tasty. In the plates of the Trapanese kitchen is highly appreciated, it is called surra and is consumed strictly on the grate or on the plate, so that excess fat can dissolve. The preserved is pink but lighter than the classic canned tuna, and is still produced today in Trapani, in the province of Reggio Calabria and Sardinia. La ventresca è la più pregiata parte del tonno rosso, che viene normalmente consumata fresca o confezionata sott'olio di oliva. La ventresca di tonno è ottenuta dalla parte più grassa dell’animale, quella che avvolge la cavità addominale: i fasci muscolari sono intessuti di grasso e rendono la carne più morbida e gustosa. Nelle tavole della cucina trapanese è molto apprezzata, è chiamata surra ed è consumata rigorosamente alla brace o sulla piastra, così che l'eccesso di grasso possa sciogliersi. Quella in conserva è di colore rosa, ma più chiaro del classico tonno in scatola, ed ancora oggi è prodotta nel trapanese, in provincia di Reggio Calabria e in Sardegna. Negli ultimi anni diverse aziende producono scatolette di ventresca di tonno rosso o del meno pregiato tonno pinna gialla. La parte alta della ventresca di tonno è spesso chiamata mosciame. Tonno rosso da cui si ottiene la ventresca.
