Rancid
It is a kind of deterioration when the food such as sardine oil is exposed to the air for a long time or heated to high temperature, the taste and color are deteriorated and the odor is generated. Raspberry is divided into 'hydrolytic rancidity' by water, acid, alkali and enzyme and 'oxidative rancidity' by oxidation. Rancidity may cause degradation of food quality, destruction of nutrients, and formation of cancer-inducing factors, so it is good to refrain from eating foods that cause rancidity and prevent rancidity. Rust occurs better in oils with higher unsaturation. To prevent rancidity, add antioxidants to the preserved foods, store them in a cool, shady place, and do not store them for too long. Also, the heated oil is not reused.
