Agar is a type of gel that is made of sea moss or known as gelatin. The gelatin powder is also widely used in other desserts. The gelatin is a gelatinous substance produced from polysaccharide in seagrass, where it accumulates in the agarophyte cell wall and functions as a supporter of the main structure of the algal cell wall. To be a mixture of two components: linear polysaccharide agarose, and a heterogeneous mixture of two smaller molecules called agaropectin. Throughout history to date, it has become the main ingredient of dessert throughout Asia and also as a solid sustrate for growth medium for microbiological work. In addition, it can be used as a salarier, replacement of vegetarian roller, soybean paste, fruit preserves, aiskerim, and other desserts, as a fermentation agent in fermentation, and paper and cloth lubricants. The gel material is a non-branched polysaccharide produced from cell wall especially the red algae species of the genus Gelidium and Gracilaria, or seagrass.

Agar-agar adalah sejenis kuih berupa gel yang diperbuat daripada lumut laut atau dikenali juga dengan nama agar-agar. Serbuk agar-agar juga banyak digunakan dalam pencuci mulut lain. Agar-agar merupakan bahan bergelatin yang dihasilkan dari polysaccharide pada rumpai laut , di mana ia terkumpul pada dinding sel agarophyte dan berfungsi sebagai penyokong struktur utama bagi dinding sel alga. Agar merupakan campuran dua komponen: linear polysaccharide agarose, dan a heterogeneous campuran dua molekul lebih kecil yang dipanggil agaropectin. Sepanjang sejarah sehingga masa kini, agar merupakan bahan utama sebagai pencuci mulut diseluruh Asia dan juga sebagai sustrate pepejal bagi bahan medium pertumbuhan bagi kerja mikrobiologi. Agar juga boleh digunakan sebagai pelawas, pengganti geletin vegetarian, pemekat sup, pengawet buah, aiskerim, dan pencuci mulut yang lain, sebagai bahan pencerah dalam penapaian, dan pelicin kertas dan kain. Bahan jel adalah polysaccharide tidak bercabang yang dihasilkan dari dinding sel terutamanya spesies alga merah genus Gelidium dan Gracilaria, atau rumpai laut.
