Rachatlukum - a sweet confectionery typical of many local cuisines, mainly from the Balkan and Middle East regions. This is a traditional tart, usually with fruit flavor and consistency of jelly, made from wheat starch or potato flour and sugar. Instead of sugar, honey was originally used, and today coconut shakes are often used. Rachalucukum is administered in the form of powdered sugar cubes. Quite often the tatum is suitable for flavor and aroma with rose water, vanilla or mint. Some additions include the addition of walnuts, hazelnuts, peanuts, pistachios, almonds, etc. Depending on the region and time, different types of fruit are also used: strawberries, cherries, lemons, oranges. The origins of this dessert go back to the 15th century, but today the most used recipe comes from the 19th century. Sugar, potato flour and water are boiled together with nuts or fruits for 1-2 hours until thickened.

Rachatłukum – słodki wyrób cukierniczy charakterystyczny dla wielu lokalnych kuchni, głównie z obszaru Półwyspu Bałkańskiego i Bliskiego Wschodu. Jest to tradycyjny smakołyk, zwykle o smaku owocowym i konsystencji galaretki, wyrabiany ze skrobi pszennej lub mąki ziemniaczanej oraz cukru. Zamiast cukru pierwotnie używano miodu, a obecnie często stosuje się wiórki kokosowe. Rachatłukum jest podawany w postaci kostek oprószonych cukrem pudrem. Dość często rachatłukum nadaje się smak i aromat wodą różaną, wanilią lub miętą. Niektóre przepisy dopuszczają poza tym dodawanie do smaku orzechów włoskich, orzechów laskowych, orzeszków ziemnych, orzeszków pistacjowych, migdałów itp. W zależności od regionu i pory stosuje się też różnego rodzaju owoce: truskawki, wiśnie, cytryny, pomarańcze. Początki tego deseru sięgają XV wieku, natomiast obecnie najczęściej stosowany przepis pochodzi z XIX wieku. Cukier, mączkę ziemniaczaną i wodę gotuje się wraz z orzechami lub owocami przez 1–2 godziny, aż zgęstnieje.
