Cyperus esculentus, popularly known as the junca, is a cosmopolitan herbaceous plant with long, thin leaves that produces a tubercle known as chufa. It is traditionally grown in Spain, on the outskirts of Valencia. Cyperus esculentus, conhecido popularmente como junça, é uma planta herbácea cosmopolita de folhas longas e finas que produz um tubérculo conhecido como chufa. É tradicionalmente cultivado na Espanha, nos arredores de Valência.
