Chimarrão or mate is a characteristic beverage of the South American culture. It is a legacy of the indigenous Quechua, Aymara and Guarani cultures. It consists of a gourd, a pump, ground yerba mate and warm water. The term mate, as synonymous with chimarrão, is more commonly used in Spanish-speaking countries. The term "chimarrão" is the most adopted in Brazil, although it is a term derived from the Castilian word cimarrón, which in turn designates the domesticated cattle that returned to the state of wild life, and also the dog without owner, wild, that it feeds on animals it hunts. Chimarrão was forbidden in southern Brazil during the sixteenth century, being considered "herb of the devil" by the Jesuit priests of the reductions of the Guairá. From the seventeenth century, however, they changed their attitude toward drinking and began to encourage its use in order to alienate the local population from the consumption of alcoholic beverages.

O chimarrão ou mate é uma bebida característica da cultura do sul da América do Sul. É um hábito legado pelas culturas indígenas quíchuas, aimarás e guaranis. É composto por uma cuia, uma bomba, erva-mate moída e água morna. O termo mate, como sinônimo de chimarrão, é mais utilizado nos países de língua castelhana. O termo "chimarrão" é o mais adotado no Brasil, embora seja um termo oriundo da palavra castelhana cimarrón, que designa, por sua vez, o gado domesticado que retornou ao estado de vida selvagem, e também o cão sem dono, bravio, que se alimenta de animais que caça. O chimarrão chegou a ser proibido no sul do Brasil durante o século XVI, sendo considerado "erva do diabo" pelos padres jesuítas das reduções do Guairá. A partir do século XVII, no entanto, os mesmos mudaram sua atitude para com a bebida e passaram a incentivar seu uso com o objetivo de afastar a população local do consumo de bebidas alcoólicas.
