CAVIAR s.n. 1. Black steak, preserved salted, marketed in three quality categories: caviar beluga = mallard caviar, with the largest beans, grayish-black; caviar ossetra = eggs with smaller berries, brown, very delicate; caviar sobruga = eggs with very small grains, pale-gray. 2. German or Danish caviar = ordinary, large, round, lobster (Cyclopterus lumpus), northern seascapes, artificially colored in black or red, pressed and salted, used as caviar or Manciuria , being much cheaper. 3. White caviar or bottarga = sphagnum or tuna sprouts, taken in the membrane, salted, dried and pressed, highly appreciated in the Mediterranean countries. CAVIÁR s.n. 1. Icre negre de sturioni, conservate sărate, comercializate în trei categorii de calitate: beluga caviar = icre de morun, cu boabele cele mai mari, de culoare cenușie-neagră; caviar ossetra = icre cu boabe mai mici, maronii, foarte delicate; caviar sevruga = icre cu boabe foarte mici, de culoare gri-pal. 2. Caviar german sau danez = icre obișnuite, mari, rotunde, prelevate de la lump (Cyclopterus lumpus), pește-lanternă din mările nordice, colorate artificial în negru sau roșu, presate și sărate, folosite ca surogat de caviar sau icre de Manciuria, fiind mult mai ieftine. 3. Caviar alb sau bottarga = icre de chefal sau de ton, prelevate în membrană, sărate, uscate și presate, foarte apreciate în țările mediteraneene.
