QUE SIGNIFIE BUBBLE AND SQUEAK EN ANGLAIS
Bulle et grincement
La bulle et le grincement sont un plat traditionnel anglais fabriqué avec des légumes peu profonds issus d'un diner rôti. Les ingrédients principaux sont la pomme de terre et le chou, mais on peut ajouter des carottes, des pois, des choux de Bruxelles ou tout autre reste de légumes. Les légumes hachés sont frits dans une casserole avec de la purée de pommes de terre ou des patates rôties jusqu'à ce que le mélange soit bien cuit et brun sur les côtés. Le plat est tellement appelé parce qu'il fait des sons bouillonnant et grinçant pendant la cuisson. Il est souvent servi avec de la viande froide du rôti du dimanche, des cornichons ou de la sauce marron, ou accompagné d'un petit-déjeuner anglais complet. La viande était traditionnellement ajoutée à la bulle et grinçait elle-même, bien qu'elle soit plus souvent fabriquée sans viande. La première recette connue était par Maria Rundell en 1806. Le nom de la bulle et du grincement est utilisé principalement en Angleterre, et cela peut aussi être compris dans certaines parties d'autres pays du Commonwealth et des États-Unis. La bulle et le grincement étaient un plat populaire pendant la Seconde Guerre mondiale, car c'était un moyen facile d'utiliser les restes pendant une période où la plupart des aliments étaient soumis au rationnement.
