Cholent
Cholent ou Hamin est un ragoût juif traditionnel. Il est généralement mijoté pendant une nuit pendant 12 heures ou plus, et il est mangé pour le déjeuner au Shabat. Cholent a été développé au cours des siècles pour se conformer aux lois juives qui interdisent de cuisiner le sabbat. Le pot est mis à ébullition vendredi avant le début du sabbat, et maintenu sur une puce ou une plaque chauffante, ou placé dans un four lent ou une cuisinière électrique lente jusqu'au lendemain. Il existe de nombreuses variantes du plat, ce qui est standard dans les cuisines Ashkenazi et Sephardi. Les ingrédients de base du cholent sont la viande, les pommes de terre, les haricots et l'orge. Le hamac de style sépharais utilise du riz au lieu de haricots et d'orge, et du poulet au lieu de boeuf. Une addition traditionnelle de Sephardi est des œufs entiers dans la coquille, qui devient brun pendant la nuit. Le cholent Ashkenazi contient souvent kishke ou helzel. La cuisson tardive de la nuit permet d'imprégner les saveurs des divers ingrédients et de produire le goût caractéristique du cholent.
