Effervescence
L'effervescence est l'évacuation du gaz à partir d'une solution aqueuse et de la moussage ou de la pétillation qui résulte d'une libération du gaz. Le mot effervescence est dérivé du verbe latin fervere, précédé par l'adverbe ex. Il a la même racine linguistique que le mot «fermentation», une réaction biochimique complexe conduisant, entre autres, à la production de dioxyde de carbone et à la libération subséquente de gaz CO2 d'une solution lorsqu'elle devient sursaturée par rapport à ce gaz. La fabrication de la bière, du vin ou du champagne par fermentation s'accompagne ainsi d'une effervescence du CO2 du baril où se produit le processus. L'effervescence peut également être observée lors de l'ouverture d'une bouteille de champagne, de bière ou de boissons gazeuses telles que les boissons gazeuses. Les bulles visibles sont produites par l'échappement de la solution du gaz dissous. Au laboratoire, un exemple commun d'effervescence est observé si l'acide chlorhydrique est ajouté à un bloc de calcaire. Si quelques morceaux de marbre ou un comprimé antiacide sont placés dans de l'acide chlorhydrique dans un tube à essai équipé d'un bouchon, l'effervescence du dioxyde de carbone peut être observée.
