La solubilité est la propriété d'une substance chimique solide, liquide ou gazeuse appelée soluté à dissoudre dans un solvant solide, liquide ou gazeux pour former une solution homogène du soluté dans le solvant. La solubilité d'une substance dépend fondamentalement des propriétés physiques et chimiques du soluté et du solvant ainsi que de la température, de la pression et du pH de la solution. L'étendue de la solubilité d'une substance dans un solvant spécifique est mesurée en tant que concentration de saturation, où l'ajout de plus de soluté n'augmente pas la concentration de la solution et commence à précipiter la quantité excessive de soluté. Le plus souvent, le solvant est un liquide, qui peut être une substance pure ou un mélange. On peut aussi parler de solution solide, mais rarement de solution dans un gaz. L'étendue de la solubilité varie largement, de manière infiniment soluble, comme l'éthanol dans l'eau, à peu soluble, comme le chlorure d'argent dans l'eau. Le terme insoluble est souvent appliqué à des composés peu ou très peu solubles. Sous certaines conditions, la solubilité à l'équilibre peut être dépassée pour donner une solution dite saturée, métastable.
