Pasteurisation
La pasteurisation ou la pasteurisation est un processus de chauffage des aliments, qui est habituellement un liquide, à une température spécifique pendant une durée prédéfinie, puis refroidit immédiatement après avoir été retiré de la chaleur. Il s'appelle le microbiologiste Louis Pasteur pour son travail sur son processus de pasteurisation. Ce processus ralentit la détérioration causée par la croissance microbienne dans les aliments. Contrairement à la stérilisation, la pasteurisation n'est pas destinée à tuer tous les microorganismes dans les aliments. Au lieu de cela, il vise à réduire le nombre d'agents pathogènes viables, de sorte qu'il est peu susceptible de provoquer une maladie. La stérilisation à l'échelle commerciale des aliments n'est pas courante car elle affecte négativement le goût et la qualité du produit.
