La vaniglia è un sapore derivato dalle orchidee del genere Vanilla, principalmente dalla specie messicana, vaniglia piatta. La parola vaniglia, derivata dalla diminutiva della parola spagnola vaina, si traduce semplicemente come piccolo pod. I popoli mesoamericani precolombiani coltivano la vite dell'orchidea di vaniglia, chiamata tlilxochitl dagli aztechi, e il conquistatore spagnolo Hernán Cortés è accreditato con l'introduzione di vaniglia e cioccolato in Europa negli anni Venti. I tentativi iniziali di coltivare la vaniglia al di fuori del Messico e dell'America Centrale si sono rivelati inutili a causa della relazione simbiotica tra l'orchidea vaniglia e il suo impollinatore naturale, le specie locali di Melipona api.
