Durum
O trigo duro ou o macarrão é a única espécie tetraploide de trigo de importância comercial amplamente cultivada hoje. Foi desenvolvido por seleção artificial das cepas de trigo domesticadas de emmer, anteriormente cultivadas na Europa Central e no Próximo Oriente, em torno de 7000 aC, que desenvolveram uma forma de nado e trilha livre. Durum em latim significa "difícil", e a espécie é o mais difícil de todos os trigos.
