Grâul dur sau grâul macaronic este singura specie tetraploidă de grâu de importanță comercială, cultivată pe scară largă în prezent. Ea a fost dezvoltată prin selecția artificială a tulpinilor de grâu emmer domesticite cultivate anterior în Europa Centrală și în Orientul Apropiat în jurul anului 7000 î.Hr., care au dezvoltat o formă dezbrăcată și liberă. Durul în limba latină înseamnă "greu", iar specia este cea mai grea dintre toate grâul. Conținutul său ridicat de proteine, precum și puterea sa, fac ca produsul dur să fie folosit special, cele mai cunoscute fiind pastele, care în Italia sunt făcute exclusiv din grâu dur. Grâul dur este folosit extensiv în fabricarea produselor de panificație. Cu toate acestea, este neobișnuit prin faptul că, în ciuda conținutului foarte ridicat de proteine, este scăzut în glutenul dorit necesar pentru a forma o bandă de coajă necesară pentru ca pâinea să crească. Ca rezultat, deși există 100% paine de grâu dur, cum ar fi painea pagnotte di Enna sau "rimacinato" din Sicilia, precum și altele, în majoritatea cazurilor aluatele de pâine conțin doar o porție de grâu dur și sunt completate substanțial cu alb făinoase, adesea cele mai ridicate în gluten necesare pentru a compensa contribuția slabă a glutenului la făină dur.
