Guaiacol este un compus organic cu formula C6H4, descoperit de Ascanio Sobrero. Deși este biosintezat de o varietate de organisme, acest ulei gălbui aromat este de obicei derivat din guaiacum sau creozot de lemn. Probele se întunecă la expunerea la aer și la lumină. Guaiacol este prezent în fumul de lemn, care rezultă din piroliza ligninei. Compusul contribuie la aroma multor compuși, de ex. cafea prăjită.
