În gastronomie, mod de a prepara, în special carne, dar și alte alimente, prin expunere directă la radiații calorice, în diverse feluri: la frigare = bucăți de alimente sau un animal întreg sunt infipte pe o vergea de lemn sau de metal; la proțap = pe o vergea sprijinită de două crăcane; la grătar = pe un grătar deasupra unor cărbuni încinși, la flacără de gaz sau pe un grătar electric; anumite alimente pot fi fripte direct pe jar, iar din carne se poate face friptură la cuptor, aceasta fiind din punct de vedere tehnic, de fapt, o coacere.
