Im Laufe der Geschichte in die heutige Zeit wurde Agar hauptsächlich als Zutat in Desserts in ganz Asien und auch als ein solides Substrat verwendet, um Kulturmedien für mikrobiologische Arbeit zu enthalten. Agar kann als Abführmittel, Appetitzügler, vegetarischer Gelatineersatz, Verdickungsmittel für Suppen, in Obstkonserven, Speiseeis und anderen Desserts, als Klärmittel beim Brauen und zur Leimung von Papier und Stoffen verwendet werden.
