TAHN s.n. Tahan (Tahin, Tahina oder Tahini) wird speziell für die Länder des Nahen Ostens hergestellt und ist eine bittere Paste, die ausschließlich durch Zerkleinern von ungeschälten (gelblichen Paste) oder geröstetem (Sesam) Fruchtfleisch gewonnen wird. Es wird als solches als ein Bad, in dem es in Stücke von Lipi getränkt ist, aber vor allem als Ergänzung zu verschiedenen Pürees (zB Hummus) konsumiert; gepresstes Öl und gesüßt, wird verwendet, um die Halvau vorzubereiten. TAHÂN s.n. Preparat specific țărilor din Orientul Mijlociu, tahânul (numit aici tahin, tahina sau tahini) este o pastă amară obținută exclusiv prin zdrobirea semințelor neprăjite (pastă gălbuie) sau prăjite (pastă maronie) de susan. Se consumă ca atare, ca un dip în care se înmoaie bucăți de lipie, dar mai ales ca adaos la diverse piureuri (de ex. hummus); stoarsă de ulei și îndulcită, se foloseste pentru a prepara halvaua.
